Shrimp and Roasted Delicata Squash Salad

  • Simple Bengali delights! Cabbage cooked with shrimp & turmeric / বাঁধাকপি দিয়ে চিংড়ি is one of those lovely dishes that are easy enough for a weeknight dinner. .

Here's a quick "this is not a recipe" style #recipe (only slightly less vague than what you'll get from a South Asian mom/aunt/grandma) if you want to give this a try (tag me @noorieboorie in your photos if you do!). You can omit the shrimp to make a cabbage bhaji that's still delicious.

Ingredients (do use your আন্দাজ/judgement 😂): .
.
- shrimp, 15-20 pieces
- turmeric, 3/4 teaspoon
- vegetable or mustard oil, 2-3 tablespoons
- cumin seeds, 1 teaspoon
- onion, 1 medium chopped
- ginger-garlic paste, 1 teaspoon
- ground cumin, 1 teaspoon
- red chili powder, 1/2 teaspoon
- small cabbage, finely chopped
- tomato, chopped (optional)
- green chilies, 2-3 (optional)
- cilantro, handful chopped
- salt, to taste

Instructions: .

1. Marinate shrimp (cleaned & deveined) with pinches of turmeric (abt 1/4th tsp) and sprinkles of salt. Set aside.
.
2. Heat a couple of tablespoons of cooking oil in a wide cast iron pan or a skillet set over medium heat.
.
3. Partially cook the shrimp quickly in two batches, frying about 1-2 minutes on each side. Remove from heat & set aside.
.
4. To the same pan, add a bit more oil (if it has dried out). Once the oil is hot, add cumin seeds and cook for a minute.
.
5. Add onions next, cooking until they are soft and translucent.
.
6. Add ginger-garlic, turmeric, cumin and red chili powder to the onions and cook further for another minute or two, until the spices and onions have mixed well.

7. Add the cabbage and tomatoes (if using), and cook on medium-high heat, stirring frequently. Cook until cabbage loses about half its volume, then lower the heat and cook further until most of the water has evaporated.

8. Add the shrimp back in the pan, mixing well with the cabbage. Add salt to taste and chopped cilantro. Add in green chillies if you like more heat.

9. Cook on low-heat for a few more minutes until the shrimp is thoroughly cooked, then remove from heat.

10. Eat with rice, daal and a wedge of lime!

I adore the way vegetable market vendors display their produce for sale in South Asia. Vegetable artistry of another kind and at another level! I appreciate all the thought and effort that must go into arranging them so beautifully and meticulously everyday.

  • Currently craving: Bangladeshi style chicken korma. It's savory, with a slight hint of sweetness, and redolent of cardamom, cinnamon and ghee. This has been my favorite dish ever since I was a wee little kid.

  • Not to sound dramatic or spoiled, but I'm currently eating bland, sugar-free cereal in our dark living room (where is the sun??) at home in #Queens while thinking about this breakfast I had just over a week ago on a beautiful sunny day in #SriLanka.

Feeling grateful for the time spent back home, but when will time travel be a thing? 🤪.

  • Remembering the vibrant greens from #Bangladesh & #SriLanka over the last month.

I got my fair share of bemused looks from vegetable market vendors in both countries while taking photos like these but it was totally worth the momentary embarrassment because now these colors are mine to stare at forever. ♥️.

  • Local #teatime snacks (called "short eats" in #SriLanka) at a "kade" (casual street-side stalls/stores) -- vades, cutlets, rotis. Basically, delicious CARBS. You can add your desired dosage of that firey chili relish.

We ate these alongside hot cups of "plain tea" (tea without milk) which you drink while taking a bite of jaggery (#gur) to sweeten each sip. 😋.
